Soup 8 - Cream of Vegetable

My friend Jake suggested this soup to me. I’ve never been to the Dixie Stampede so I can’t tell you if it tastes like Dolly Parton’s famous recipe but I can tell you it’s very good. I read a bunch of recipes and settled on this one: https://copykat.com/dixie-stampedes-cream-of-vegetable-soup/ because it included variations on the soup and did not include margarine or corn syrup.


It was very easy to put together and with the exception of the heavy whipping cream I had all of the ingredients at my house (and I usually have heavy whipping cream but I was out.)

The soup tastes really good. It’s not a hearty meal soup but a soup to go with a meal. If you wanted this to be the main course I'd suggest adding in potatoes and other veggies and serving with a hearty cornbread or loaf of sourdough.

From start to finish this was done in under an hour - including doing the dishes. I will make this soup again but I will add in more vegetables. This would be a good soup to serve with a grilled cheese sandwich or a meal salad.
