Soup 18 - Beef Pho

I have always loved pho. I am especially fond of a good beef pho with shaved meat, noodles, and vegetables. For this soup I made beef balls because I had ground beef on hand.


I didn't follow a recipe. I started out with my favorite store brand of beef broth and added four cloves of garlic that I had minced, a thumbs sized piece of ginger that I had minced, and half of a white onion that I had minced. For spices I used fenugreek, fennel seeds, cardamom seeds, and a cinnamon stick.


I let the broth and the spices simmer for several hours while I did other work in the kitchen. For my beef balls, I mixed garlic and onions with an 80/20 regeneratively grown ground beef. I formed the meat into small balls and cook them on my stove.


For my noodles, instead of using a traditional rice noodle I used a Shirataki noodle that was made with konjack flour.
