I attended a ladies gift exchange and was introduced to the soup by my friend Colleen. It was amazing so I asked for the recipe.
I forgot to take process photos. It was easy to assemble. The recipe is below with my notes on changes/additions.
1 Rotisserie chicken, shredded (the store was out so I made my own rotisserie style chick in the instant pot and it was AMAZING! Way better than store bought)
4 or 5 cans of White Northern beans, rinsed (I started with dry beans and sprouted them and then cooked them in the instant pot)
2 - Pace Chucky Medium Salsa - medium size jar (around 16 oz) (I used Newman's organic medium salsa)
2 - Pace Green Salsa Verde (they only had one jar so I only used one)
1 Block of Pepper Jack Cheese and a block of Monterey Jack cheese, shredded or small cubes (I cut mine into small cubes but will shred next time)
Cumin to taste - start with 1 teaspoon
Garlic Powder to taste
Mix it all together until hot and cheese is melted. You can add more cheese, hot sauce and sour cream in the serving bowls for individual preferences.
Colleen's Notes:
You may need to use some chicken broth if too thick. It depends on your taste buds. (I did add some chicken bone broth)
You can do lots of variations on this recipe, increase or decrease the ingredients
Add tomatoes, add peppers, use different beans.
The reason I use the pace products, is they put lots of peppers and onions in the salsa already, much more to my liking for chili purposes.
My instant pot rotisserie chicken was easy to make. I just searched for a recipe online. In the future I will brine my chicken and then do a rub to infuse the flavors deeper and skip the chemicals from the store bought chicken.
