Soup 16 - Vegan Corn Chowder
I love corn chowder. I can't image how it will taste vegan - so here goes! I read a lot of recipes and chose this one for its easy ingredients (I had most at home) and variety. https://simple-veganista.com/vegan-corn-chowder/#tasty-recipes-51586-jump-target
The instructions were easy to follow and had suggestions for changing things up if you are avoiding nuts or nightshades.
I got to use my handy pampered chef chopper for this recipe. It's one of my favorite kitchen tools.
Two changes I made where I used chicken broth in place of vegetable broth so it's not vegan. It is dairy free. I also substituted carrots for the bell pepper because I didn't have any peppers at home.
The recipe instructions were thorough and easy to follow. Including the chopping and cooking, from start to finish was under two hours and a bulk of that was hands off.
While the recipe tasted amazing, it is not even a close second to a dairy filled creamy corn chowder. I used cashew cream for my cream base and added in nutritional yeast to give it cheesiness. If you have never had a traditional corn chowder, you'll love this recipe. If you are a fan of the dairy filled corn chowder this is going to be completely different. I would totally make this again for my dairy free friends.
