When the weather starts to get chilly I get a hankering for soup. I decided to clean out my fridge and make a vegetable soup from the vegetables I found there.
I have a carrot, a sweet potato, a white potato, a yellow potato, a beet, a rutabaga, a zucchini, a parsnip, an onion, loads of garlic, some broccoli, and a yellow squash.
Because I have it on hand, I'm using some Sam's organic beef bone broth as the liquid base.
The soup turned out really well. I added more salt after tasting my first bowl and that made all the difference. I didn't use many spices, I just let the vegetables take over the flavor, so I added in pepper, salt, and a little bit of old bay seasoning.
Voila!
