I had someone suggest making dill pickle soup for my soup challenge and after reading numerous recipes I chose this one:
I am a pickle lover, but I have never had dill pickle soup before. I was excited to try this recipe. The soup was quick to put together and in under an hour I had it in a bowl ready to eat. I did need more juice than came in the jar of pickles I used for the soup - but I always have pickles at home so I just used a little from another jar. Buy good pickles!
It smelled and tasted great! I did get Tim to help me mix in the flour mixture. I could have done it myself, but it was much easier to have a helper.
I shared this soup with several friends and they all liked it. This was great with a thick wedge of sourdough bread. I garnished it with some dried dill. I will definitely make this recipe again. It was different but not weird. I did not make any changes to the recipe.
My soup rankings so far - It's getting harder and harder to order them!
#1 Broccoli Cheddar Soup
#2 Chicken and Wild Rice Soup (I made it again and it was SOOO good!)
#3 Polish Dill Pickle Soup
#4 Cream of Vegetable Soup (Dolly Parton's Dixie Stampede Soup
#5 Mulligatawny (Soup Nazi Copycat recipe)
#6 Shrimp Ramen
#7 Cabbage Roll Soup (I made this twice it was soooo good!)
#8 Texas Chili (still Tim's favorite)
#9 Italian Sausage Soup
#10 Simple Lentil Soup
I had never eaten dill pickle soup. Everyone should try it. Then we can go back to eating our dill pickles on cheese burgers, like God intended.
