I was intrigued when a friend told me I should cook a juicy Lucy. I've never heard of it before. But once I read about it, I knew I would love it. What's not to love when you mix Good burger meat with cheese?
I'm picky about my ground beef and I usually buy a regeneratively grown 80/20 mix. If I can't find that I'll get a grass fed and finished 80/20. Cheap meet equates a not so tasty burger in my opinion.
The juicy Lucy was relatively easy to make, but I did watch a couple of videos to see how people formed the patties around the cheese to keep the seams completely sealed. I had about 85% success in keeping my cheese encased in my burger patty.
I lightly seasoned my ground beef before I shaped it into patties. 1 pound of ground beef made three nice size patties, and one tiny patty. I served them on toasted bun for Tim and a lettuce wrap for me.
